Although it looks mild from the outside, just having one spoonful of it will instantly shock you with the tastes of numerous spices and sour yogurt. Why is yogurt & chicken a great match?

It is said that yogurt makes chicken, pork, and several kinds of fish tender. The reason is not clear but people say there are probably two reasons. First reason which is mentioned by Meiji Corp. is that lactic acid from yogurt loosens muscle fibers of meat and expands with components of cells and collagen, making meat soft and juicy (Japanese reference). The other reason could be that yogurt covers up the surface of meat or fish and retain juicy oil inside while cooking.

Yogurt – We’re not so particular about the kind of yogurt, but we love to use Meiji Bulgaria Yogurt. It’s really famous and easy to access in Japan. We can buy it not only in supermarkets but also convenience stores like seven-eleven, or simply via the internet. Of course, any types of yogurt will work for this recipe as long as you choose plain one, not pre-flavored ones like strawberry etc.
Meat – Currently we tend to use chicken breast to reduce fat, and especially in this recipe, chicken breast gets tender to the same level as chicken thighs due to the yogurt effect. So you don’t need to be concerned about the texture. Not only chicken can be positively affected by yogurt, but also pork can be. If you may like pork than chicken, you can use it the same way.
Nuts-We are addicted to cashew nuts actually, so we normally use it to add the dishes a more rich and mild flavor. Cashew nuts highly include proteins, so I think that’s why it makes the taste deeper and complex. If you don’t have cashew nuts, peanuts possibly can be a alternative. But in that case, I recommend you to add 2 tbsp of fresh cream.
Vegetables – Sweet onion flavor is our favorite in order to produce such a spicy and strong taste. But if you want more vitamins from vegetables, you can add anything. Spices– We usually use powdered red pepper, yellow mustard, coriander powder, cumin seeds, grated ginger, and garlic. But it’s acceptable to use curry powder directly and rosemary also may make good harmony with yogurt. If you want more spiciness, adding galam masala spice will also work.

How to make Yogurt chicken curry

Preparation of yogurt chicken curry will be done by 4 steps. The first thing we have to do is cook rice with turmeric powder. Secondly, while you are waiting for rice, remove the excess fat and skin from the chicken, cut into bite-sized pieces and season with salt and pepper. Thirdly, throw plain yogurt, cashew nuts, one and half cups of water and bit of salt into a blender and mix it. At the final step, roughly mince the onion.

Heat oil and spices in a pan over low heat, and when they start to bubble, add the minced onions, and stir fry over low to medium heat until the onions become transparent.

Add garlic and ginger and stir fry until they soften. Don’t go over the top and brown them.

Add the chicken and stir fry. When the oil is evenly distributed, add mixed curry sauce including nuts and yogurt. Then simmer over low heat for 15 minutes. If the liquid starts to evaporate, add a little water to adjust. The bottom of the pot burns easily, so stir occasionally.

Transfer to a serving dish immediately with hot-hot turmeric rice and garnish with coriander if you may like.

As I mentioned above, ingredients are just one example. The key component is the plain yogurt though, so you can easily arrange this recipe with using other type of meat or vegetables. I recommend you to use at least one green vegetable to make it look colorful and gorgeous.
