Hi there! It’s financial report season in Japan, so work has been a little busy. So here’s another super easy recipe for all that can’t devote much time to cooking, but want a nutritious meal to end your day. You can feel the summer from the vegetables and the sour lemon taste, and will certainly refresh you from your everyday stress! Stay tuned for a 15 minute quick recipe.

Pork & Zucchini in Lemon Soy Sauce

This meal contains colorful summer vegetables that help you cool you down. The pork contains vitamin B, and the lemon juice refreshes you with vitamin C, so you could say this meal is nutritious and healthy too! You will be astonished with the delicious taste, as the juicy pork softens the vegetables as they are stirred together, and once you put the soy sauce and lemon juice, it adds such a stimulating flavor to the overall piece. Let’s look at how easy this could be cooked.

Ingredients for this Meal

・Pork – 100g. Any kind of meat should work, but we chose pork belly for this recipe. We were so glad we chose pork belly specifically, because of it’s soft texture and extra juiciness. Pork has the power to accelerate metabolism, so it’s great for a summer recipe.
・Zucchini – 1/2. A key vegetable for this recipe. Zucchini is highly nutritious containing vitamin C, carotene, calcium, and fibers all in one body! Believe it or not, zucchini is related to pumpkin, and not cucumber. Most of all, the all in one crunchy + juicy texture cannot be altered with any other vegetable. Cut it into sizes large enough so you could feel the texture when eating.
・Onion – 1/4. My favorite vegetable so it is automatically invited into this recipe. The sweetness it yields when stir fried is unforgettable!
・Garlic – 1 clove. Mince the garlic and add it for a stimulating fragrant. Garlic is always the key for a healthy body build.

The Zucchini was huge, so we used only a half of this. We used only a quarter of the onions.

And now for the sauce…
・Soy sauce – 1 Tbsp.
・100% Lemon juice (unsweetened) – 1 Tsp. We used the pokka lemon which is highly popular in Japan sold in bottles, but if you don’t have access to these, just squeeze the juice out of a regular lemon. Mixing this with the soy sauce makes a whole new ingredient that is so mouthwatering!
・Sake – 1 Tbsp. Use it to marinate the pork before stir frying. It takes away the original pork scent. White wine can always be used instead of sake.

How to Cook this Meal

  1. Cut the ingredients: Mince the garlic, cut the onions into thick slices, and cut zucchinis into large pieces. Make sure to cut the pork belly into edible pieces too, and marinate with sake beforehand.
  2. Pre-heat the pan with oil, and saute the garlic first. Once fragrant, add the zucchini and onions and stir until translucent. Add the pork and saute them altogether, so that the meat oil mixes into the vegetables.

3. Add the lemon juice and soy sauce and stir well to let all the ingredients intermingle with the sauce. Let it simmer in low heat.

Sprinkle with black pepper and now it’s ready to serve! How easy was that?
