Once in a while, we feel like eating genovese pasta, or by another name pesto pasta. As you may know, it is a basil green sauce pasta that is so fragrant from the basil and garlic, it increases your appetite a lot! Today, we would like to introduce to you a genovese chilled pasta, with a terrific combination of shrimp and avocado.

Shrimp & Avocado Genovese

One of the popular pasta dishes in Japan would be the Genovese. The name “Genovese” comes from a place in North Western Italy called “Genoa”, which is the capital of Liguria. This place is known for a warm climate, which is best for growing basil leaves. The pasta also has another name called “Pesto”, which refers to the authentic sauce made from basil, pine nuts, garlic, Parmesan cheese, and oil. It is said that this recipe was originated in Genoa in the 1800s, and ever since has become a classical pasta dish. In Japan, we often call it the “Genove-se” (ジェノベーゼ) and love this savory pasta dish in either hot or cold. Since it’s the summer, let’s make this pasta in chilled version, using the 2 most well combined ingredients: shrimp & avocado. Being in Japan, you will see this “Ebi(shrimp)-Avocado” combo basically everywhere! It is used in hamburgers, sandwiches (Subway in Japan has this menu), sushi… you name it! It has become such a popular combination everybody craves for it. And it is indeed the greatest combination of all times with the springy texture of the shrimp, and the creamy mellow avocado mixed together. Let’s get started!

Ingredients for Shrimp & Avocado Genovese

Here are the ingredients we used for a pasta for 2 servings;

・Pasta: Anything of your choice! We used spaghetti, but short pasta would work too.

・Shrimp: Any shrimp is OK, but we used about 8 tiger shrimps

・1/2 Avocado: Be sure to pick a ripe one! Ripe avocados are black on the outside, and you can pick the soft ones in the supermarket. If they were still hard when you bought it, put it in a paper bag with a banana for a day or two, and it will become riper with speed.

・Garlic: Such a key ingredient. Because we wanted it extra fragrant, we minced them up to very small chunks.

・Green beans: Since green beans are in season, we chose to put it in.

・Genovese Sauce: In Japan, there are ready made sauces available in very reasonable prices. We bought this sauce from S&B Spice company which serves for 2 for $1.5! How do you cook Shrimp & Avocado Genovese?

  1. Prepare the shrimp. Take off the shells and devein the shrimp like in the picture.

2. Dice the avocado and marinate with lemon juice to prevent browning. Cut the green beans into bite sizes. Chop the garlic into small pieces.

3. Saute the garlic, shrimp, and green beans with olive oil and lightly sprinkle salt & pepper.

4. Place the step 3 ingredients into the bowl with avocado, and mix with the genovese sauce.

Mix ingredients well with the genovese sauce.

5. Cook pasta and drain. Cool with ice water. Place the pasta into the bowl with the ingredients, and mix well. Add olive oil if the pasta is sticking together, and add salt & pepper if necessary.
