Namul is a great side-dish which is pairing pretty well with a strongly seasoned meal. It will make your mouth and tongue super fresh like a breeze in a grass field.

What is Namul ?

Namul is one of the very popular meal in South Korea. Namul means Vegetables in Korean language. When we make namul, we mix up vegetables with sesame oil or chili oil, ginger, garlic, soy sauce, salt and pepper. That’s all what we have to do before bite it. BTW, I think Moyashi (bean sprout) namul is the most popular one in Japan.

Why Eggplant ?

Eggplant is the one of the most favorite vegetables during my whole life. Eggplants have various kind of face in cooking. If you let it throw into vegetable oil with coating flour, they are getting so much crunchy. Eggplants take the oil into their body and well mixed to make a good flavor. Oil and eggplant are really matching like a best friend. On the other hand, eggplant is really independent, he can make us happy on his own. Once you just boil him, his texture is dramatically change into juicy taste. It’s completely different when he is together with oil. So I love eating egg plant just after boiling with soy sauce too.

Namul of egg plant is a great recipe with enhancing both eggplants’ characteristics at the same time. It means that eggplant stay juicy and collaborate the best friend of him, Oil, in Namul.

Tips

Pour the water into pan and turn on the heat. When it comes to the boil, let the slices of eggplant dive into hot water. After eggplant softened, pick them up and leave them well drained and cool. Then mixed them up with a ingredients of special sauce.

 1.50 tbsp Chili Oil
 1 tbsp Soy sauce
 Fried slices of garlic (as you may like)
