What is Fried Teriyaki-like Tebasaki ?

Fried Teriyaki-like Tebasaki is very popular side-dish as a Izakaya recipe.It is dipped into soy sauce and sugar based sauce and fired.Because of its strong taste and flavors, They are pairing pretty well with beer and Japanese sake. By the way, Izakaya is a kind of restaurant for Japanese drinking-party.

Why is it better to make and taste it in home ?

Actually, Izakaya meals tend to be too much seasoned, such as salt, soy sauce, sugar….everything! Of cause, it is delicious and makes me crazy into it but I believe we can make it tasty even if with less quantity of spices and oil. That means I think it’s better to consider health at that same time.

How to make it ?

Put chicken wings out of the tray and make several holes in the meat with a knife or fork. And marinade it with special sauce during 30 min around. That is a key point of making strong taste with less amount of salt. Then add the Garam masala as a Kakushi-aji which is something to enhance people to love that food, Japanese word. (BTW, if you make it Chinese-like taste, add powdered star anise instead of Garam masala). Coat it with flour and fry it. Finally, mixed up with another special sauce which is separately prepared, then finish !

 700 g Chicken Wings
 1.50 tbsp Flour
 Roasted Sesame
 Pepper
For marinade
 15 g Grated Ginger
 1 Grated Garlic
 2 tbsp Soy Sauce
 1 tbsp Mirin (or White wine)
 1 tsp Galam masala (or Powdered Star anise)
Sauce for dip
 1 tbsp Sugar
 0.50 tbsp Mirin (or White wine)
 1.50 tbsp Soy Sauce

Pierce the several hole on chicken wing with knife or folk.

Mix all ingredients for marinade and soak chicken into it at least for 20 min, overnight in a refrigerator is also OK.

After that, pick up chicken wings and pour the sauce from the bowl into the pot and add the seasonings for dip-sauce. Bring the pot to a boil over medium heat, lower the heat and simmer for about 3 minutes. Then the sauce for fried chicken wings is complete.

Take chicken wings back into the bowl which was used for marinade, add the flour to the bowl and mix. When it's all mixed together and sticky, it's ready to fry.

Heat the frying oil to a medium temperature of 170 ℃, fry for 8~10 minutes while stirring occasionally until golden brown, then remove from the tray.

Dip it in the sauce from Step 3 and line it up in a tray. Sprinkle white sesame seeds and pepper, and it's done.
